Summer Peach Prosciutto & Burrata Salad
The perfect summer salad
I’ve always loved fruit in my salad — blueberries, strawberries, apples — but let me tell you, peaches are my new favorite. This salad is so light and refreshing, requires only a few simple ingredients and is packed with flavor. The best part? It takes less than 10 minutes to make start to finish, and you can easily modify the recipe to fit your preferences. Add this one to your summer line up!

SUMMER PEACH PROSCIUTTO & BURRATA SALAD:
1-2 cups arugula
2 large ripe peaches
1 ball of burrata (I get Trader Joe’s 8oz container and use half)
2 ounces of prosciutto (I get Trader Joe’s 4oz container and use half)
1/2 cup walnuts, chopped and toasted
1/4 cup fresh basil, chopped
2 tbsp extra virgin olive oil, to drizzle
Salt and pepper
DIRECTIONS:
Preheat oven to 350 degrees (I use the toaster oven to save time!)
Chop walnuts and toast for 3-4 minutes or until golden brown
Slice peaches and warm up in the microwave for 30 seconds (optional)
Place arugula on the plate and lightly drizzle with EVOO
Top with peaches, walnuts, sliced prosciutto and chopped basil
Season burrata with salt and pepper, cut into bite size chunks and add to top
Add salt and pepper to taste
Finish with another healthy drizzle of EVOO
Serve immediately and enjoy!
