One-Pan Autumn Medley

Dinner made easy

One-pan meals are my jam… they’re an easy way to pack a nutritious punch without spending hours in the kitchen. This recipe is as easy as it gets thanks to three of my Trader Joe’s favorites — Sweet Potato Gnocchi, Sweet Apple Chicken Sausage and Uncured Turkey Bacon. Combine these with fresh vegetables and you’ve got a quick, healthy dinner that hits all the autumn taste buds. It’s the perfect weeknight meal and would also make a great Thanksgiving dish.

The best part? You don’t need to make a sauce because the sage butter crumble that comes with the Sweet Potato Gnocchi has you covered. It’s best and most creamy when consumed immediately, but if you want to save leftovers or double the recipe for meal prep, try adding a drizzle of ghee, maple syrup or honey after reheating. AUTUMN INSPIRED SHEET PAN MEDLEY:

Prep Time: 15 minutes

Cook Time: 35-40 minutes

Total Time: 50-55 minutes

Yield: 1 large sheet pan (4-6 servings)*

*I like to double the recipe and make two large sheet pans; one for dinner that night and one to use on top of salads for lunch for the next few days

INGREDIENTS:

  • 2-3 cups diced butternut squash (approx. 1/2 medium size squash)

  • 1 lb Brussels sprouts, sliced in half

  • 1 bag Trader Joe’s Sweet Potato Gnocchi with Butter & Sage

  • 1 package Trader Joe’s Sweet Apple Chicken Sausage, sliced

  • 4 ounces turkey bacon (I used 1/2 package of Trader Joe’s Uncured Turkey Bacon)

  • 1 apple (I used Gala)

  • 1/2 cup pecans, diced and toasted

  • Salt and pepper, to taste

  • Optional: 1-2 tsp fresh thyme

  • Optional: Drizzle of organic maple syrup

DIRECTIONS:

  1. Preheat oven to 450F.

  2. Line a large sheet pan with parchment paper. Lightly drizzle the Sweet Potato Gnocchi (including the sage butter crumbles), Brussels sprouts, butternut squash and apple with extra virgin olive oil and spread out on the pan. Bake for 20 minutes.

  3. Remove tray from oven and add turkey bacon slices and sliced chicken sausage. Bake for another 15-20 minutes or until bacon and chicken sausage has reached desired consistency.

  4. Chop turkey bacon and toss everything together.

  5. Add pecans (toast beforehand, if desired), thyme and a drizzle of maple syrup (optional).

  6. Salt and pepper to taste and enjoy!
