The perfect appetizer for your next holiday gathering

That way, you can be sure that there is something there that is both delicious and guilt-free! Bringing a healthy appetizer has the added bonus of being available first thing, which will help you slow way down when diving into the main meal and dessert.

With so many flavors and textures, this Holiday Roasted Vegetable Board is a real crowd pleaser. We got everything at Trader Joe’s for less than $40 and it takes less than 30 minutes to make, bake time and assembly included! Here is everything you need to re-create it, but feel free to make it your own your favorite variety of vegetables, crackers and cheeses! Happy Holidays, all!

WHAT WE INCLUDED:

Vegetables:

  • 1 pack mini peppers, multicolored - $3.99/each

  • 1 pack mini heirloom tomatoes - $3.49/each

  • 1 pack trimmed asparagus - $2.99/each

  • 1 pack cremini mushrooms - $2.29/each

  • Trader Joe’s Marinated Grilled Artichokes Halves - $3.49/jar

  • Trader Joe’s Marinated Olive Duo with Lemon & Herbs - $1.79/package

Seasonings (optional):

  • 1-2 tsp onion powder

  • 1-2 tsp garlic powder

  • 1/2-1 tsp dried oregano

  • Pink himalayan salt

  • Pepper

DIRECTIONS:

1. Preheat the oven to 450F.

2. Drizzle mini peppers, cremini mushrooms, asparagus, heirloom tomatoes and sliced zucchini with extra virgin olive oil. Place on sheet pan and lightly season with onion powder, garlic powder, salt, pepper and dried oregano.

3. Roast for 20 minutes then broil for approximately 5 minutes; or until the peppers have blackened slightly (see below).

4. Meanwhile, put olive tapenade, hummus and olives into three separate mini serving bowls (Crate & Barrel has a lot of great options). Arrange in separate corners of the platter, along with the burrata.

5. Slice baguette and arrange on one side of the platter. Arrange Olive & Fig Crips on the other.

6. Slice red pepper, avocado, and dried figs and arrange around the mini serving bowls.

7. Fill in gaps with the roasted vegetables and marinated artichoke hearts.

8. Serve immediately and enjoy!
