15-Minute Healthy Shrimp Tacos

I’m all about making healthy recipes that taste great, but don’t require hours in the kitchen. These healthy shrimp tacos fit the bill; they’re packed with flavor and taste like they took a lot longer than 15 minutes to make. Utilizing pre-chopped ingredients from Trader Joe’s, they’re the perfect throw-together-on-a-weeknight meal that the whole family will love!
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Yield: 6-8 tacos (using 4-inch tortillas)
15-MINUTE HEALTHY SHRIMP TACO RECIPE:
Shrimp:
1 lb raw shrimp (if frozen, allow extra time to thaw)
1 tsp paprika
1 tsp Italian seasoning
1/2 tsp red pepper flakes
1/2 tsp salt
1 tbsp extra virgin olive oil or avocado oil
Taco + Toppings:
1 package tortillas (we use Guerreros, Tortilla Land or Siete, which has awesome almond, cassava, chickpea and cashew flour tortillas)
1 package Trader Joe’s Healthy 8 Chopped Veggie Mix (broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, radish & celery)
1 jar Trader Joe’s Pickled Fermented Jalapeno Slices
1 block Trader Joe’s Unexpected Cheddar Cheese (or cheese of your choice), sliced
1 bunch cilantro, sliced
2 limes, sliced
DIRECTIONS:
Heat oil in a large skillet over medium heat.
Combine paprika, Italian seasoning, red pepper flakes and salt.
Put shrimp in a mixing bowl and rub in seasoning mixture. Make sure the shrimp is coated well.
Add shrimp to the hot pan and cook for 2-3 minutes on each side until shrimp is pink and cooked through.
Remove shrimp from the skillet and squeeze fresh lime juice over the top. Set aside.
Add the Healthy 8 Chopped Veggie Mix to the skillet and sauté until tender. Add a bit of water, if necessary, to prevent sticking.
Warm tortillas in microwave for 10 seconds or on skillet for 5 seconds per side.
Assemble tacos with shrimp, vegetables, jalapenos, cheese and cilantro and additional lime juice as desired.
Serve immediately and enjoy!
