10 ingredients and oh so delicious

When I think of the perfect afternoon pick-me-up, it’s gotta be healthy, hearty, crunchy, a tad sweet and a tad salty. This granola hits allllll the right notes; I’ve been making it on repeat and look forward to having it every afternoon. It takes just 35 minutes to make (start to finish!) and is full of clean, good-for-you ingredients.

The key to getting the big nutty clusters is using a good all natural nut butter, and the unsweetened coconut flakes give it a toasty, buttery flavor that is perfect for this time of year. A treat that you can feel good about? It doesn’t get much better than that!

Have the granola on its own with a great cup of coffee, mix it in yogurt or use it as a topping on a smoothie or acai bowl. I can’t wait for you to try this one!

HEALTHY GRANOLA WITH NUTTY CLUSTERS

Prep Time: 10 minutes

Bake Time: 25 minutes

Total Time: 35 minutes

Yield: 10-12 servings

Ingredients:

  • 4 cups whole rolled oats

  • 1 cup walnuts (or pecans), chopped

  • 1 cup unsweetened coconut flakes, finely chopped

  • 4 tbsp all natural creamy peanut butter (plus extra for drizzling)

  • 3 tbsp chia seeds

  • 3 tbsp coconut oil, melted

  • 1/3 cup organic maple syrup

  • 1-2 tbsp cinnamon (I’m a big cinnamon fan and used two)

  • 2 tsp vanilla extract

  • 1 tsp sea salt

Directions:

  1. Preheat oven to 325F. Line a baking sheet with parchment paper.

  2. In a large bowl, mix all ingredients until well combined (I use my hands!)

  3. Spread the granola onto the baking sheet and firmly press together, so there are no gaps or holes and the mixture is fully stuck together. This is how you’ll get the big chunks. This serving size will take up just over half of a standard baking sheet. Double the recipe to make the full sheet.

  4. Bake for 10 minutes, rotate the pan and bake for another 15 minutes or until golden brown.

  5. Remove from oven and drizzle extra peanut butter on top as desired.

  6. Let cool for 15 minutes. Use your hands to break it up into large chunks.

  7. Serve and enjoy!
